Tattie Scones
What to do with left over mashed potato the next day: Scottish tattie scones.
In Scotland we typically eat these at breakfast with bacon, sausage, black pudding, haggis, baked beans, tomatoes, mushrooms, and toast.
Give it a try, it is delicious.
Serves: as many as you make! It’s easily scalable.

Ingredients
Leftover mashed potatoes
Plain flour
Melted butter or milk
Vegetable oil
Method
Portion out a ratio of 5 parts mashed potato to 1 part plain flour.
Add a small amount of melted butter or milk then hand mix it together until you get a dough.
Roll out to 1/4 inch thick and cut to shape then fry until golden brown patches appear with a light crisp outer texture.
Serve with bacon, sausage, eggs, and baked beans.
You can also part cook them and freeze the rest for easy reheating in a frying pan when needed.
