Scapes pesto chicken and linguine

The chicken can be cooked on the barbecue, pan fried, or roasted in the oven. You can also substitute chicken breast for thighs or even pork chops.

Chicken breasts
Salt and pepper
Parmigiano Reggiano cheese
Linguine
Method
Set the barbecue grill to medium high.
Pour about 1/2 teaspoon of oil for each chicken breast into a large mixing bowl.
Add a generous pinch of salt and pepper then add the chicken breasts and move around to coat.
Place chicken on the grill not directly over the heat, but not on the ‘cold’ side of the BBQ either. You want a good amount of heat without directly blasting the chicken and causing it to burn and dry out. If your BBQ shows a temperature, aim to keep it around 400°F (200°C) with the lid closed.
Chicken will take about 6-9 minutes per side depending on the size of the chicken breast and temperature of the BBQ.
Get a pot of unsalted water boiling for the pasta. No salt needed due to the salt in the chicken, pesto, and cheese.
When it reaches a steady boil, reduce the heat to a medium-high and add the linguine pasta. Cook until al dente.
When the pasta is cooked, drain all but one table spoon of pasta water for each portion.
Add two heaped table spoons of garlic scape pesto for each portion of pasta, mix together to combine. No need to heat the pesto as the pasta will warm it.
Serve with the chicken and roasted tomatoes for a refreshing accompaniment.
