Homemade pizza recipe
Serves: 4 medium thin crust pizzas
Start to table: 20 minutes (plus oven heating time)
Ingredients
Pizza dough - see our homemade pizza dough recipe
Pizza sauce - see our pizza sauce recipe
Fresh mozzarella cheese

Semolina flour
Method
Set your oven to the hottest temperature possible.
Add a pizza stone or pizza steel and allow to heat for at least an hour.
Sprinkle a pizza paddle with semolina flour.
Form your pizzas by taking the pizza dough and stretching it gently with your hands in roughly a round shape. The dough should be so thin it is almost see-through.
Place pizza base on the pizza paddle.
Adjust the shape as needed.
Before sliding the pizza base into the oven, slide it back and forth on the paddle gently to ensure it hasn’t stuck. If it did, gently peel it off and add more semolina flour.
Slide pizza base into preheated oven.
Allow to cook for 30-45 seconds. Do not let the pizza base rise in the middle. All you want to do is firm up the base to hold the sauce.
Add a very minimal amount of pizza sauce. Just enough to cover, but not flood the base.
Top with your favourite toppings. Any ingredient that might burn or dry out should be added first, then cheese added on top.
Sprinkle with olive oil then return to the oven until charring begins to appear, approximately 5-10 minutes depending on the temperature of your oven.
