Quince Infused Gin & Tonic
Did you know you can infuse quince into your favourite gin and tonic? It is very simple to make but does require a bit of patience for the flavour to infuse into the gin.

Ingredients
750mL Langley Distilled London Gin or your choice of gin
3 Quince fruit
2 Sterilized jars
Tonic
Wedge of lime
Method
Sterilize a jar that will hold the quantity of the gin you want to infuse. Make sure to give extra room for the quince fruit.
Pour the gin into the sterilized jar.
Using a very sharp blade, cut quince fruit into wedges. The skin of the fruit can be left on.
Place wedges into the jar of gin. The more quince placed in, the stronger the flavour. Ensure that the gin covers the top of the entire quince fruit and no fruit is peaking through the fluid.
Place the jar of quince and gin in a cool dark room.
Give the jar a shake every few weeks, the quince will darken in colour from a golden yellow to a brown-orange and the gin will turn a golden colour.
Patiently wait a minimum of 6 months.
Congratulations! Your quince-infused gin is ready. Pour the quince-infused gin through a sieve into a sterilized jar.
Serve gin with tonic over ice and add a wedge of lime for garnish.
